Thanks to Paul & Jackie Black who sent us their simple, but extremely effective recipe using left over chicken from a roast to make a scrumptious, creamy and spicy Coronation Chicken sandwich, wrap or sandwich. Go meatless by replacing the chicken with a plant based alternative - there are loads of good ones out there (we quite like 'What The Cluck!' from the Vegetarian Butcher) - or Quorn pieces also work equally well.

Another 5 minute wonder. Quick, easy, effective! Customers who have tried this tell us it's the finest Coronation Chicken mix they've tasted. Adapt the heat factor by increasing or decreasing amount of Sillylilli to taste.
Works as a sandwich, toastie, wrap or jacket potato filling and easily adapted to become vegetarian or Vegan friendly.
200g of roast chicken (diced) or meat free alternative
2 heaped desert spoons of your favourite mayonnaise
2 desert spoons of sultanas
3 desert spoons of Calder’s Kitchen Sillylilli
Pinch of salt and black pepper
Mix mayonnaise, Sillylilli and sultanas together with the salt and black pepper.
Add the cooked chicken or meat alternative to the mix. Stir well to ensure everything is fully coated.
Served here on thickly sliced wholegrain bread, but also makes a tasty sandwich filler or topping for a baked potato. Alternatively, serve as a salad side dish
